- 2 cups cooked, shredded chicken You can use leftover rotisserie chicken for added flavor and convenience.
- 2 cups fresh broccoli florets
- 2 cups fettuccine or pasta of choice
- 1 cup Alfredo sauce store-bought or homemade
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
Preheat your oven to 350°F (175°C).
Cook the fettuccine according to package instructions until al dente. Drain and set aside.
In a pot of boiling water, blanch the broccoli florets for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.
In a skillet, heat the olive oil over medium heat. Add the cooked, shredded chicken, garlic powder, salt, pepper, and Italian seasoning. Stir and cook for about 2-3 minutes to heat the chicken and combine the flavors.
In a large mixing bowl, combine the cooked pasta, broccoli, chicken mixture, and Alfredo sauce. Mix well until everything is evenly coated.
Transfer the mixture to a large oven-safe baking dish. Sprinkle the top with shredded mozzarella and grated Parmesan cheese.
Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes before serving.
You can use leftover rotisserie chicken for added flavor and convenience.
