Ingredients
  

  • 1 medium cauliflower head About 1 pound.
  • ½ cup all-purpose flour
  • ½ cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup buffalo sauce Such as Frank's RedHot.
  • 1 tablespoon olive oil For drizzling.
  • to taste celery sticks Optional, for serving.
  • to taste blue cheese dressing Optional, for serving.

Instructions
 

  • Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper.
  • Wash and cut the cauliflower into bite-sized florets.
  • In a mixing bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Whisk until well combined.
  • Gradually add water to the flour mixture, whisking until smooth to create a batter.
  • Dip each cauliflower floret into the batter, ensuring it is well-coated. Place the coated florets onto the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes, or until the cauliflower becomes golden and crispy.
  • Remove the baking sheet from the oven and brush the florets generously with buffalo sauce. Drizzle a little olive oil over them for added crispiness.
  • Return the baking sheet to the oven and bake for an additional 5 minutes.
  • Once done, remove from the oven and serve immediately with celery sticks and blue cheese dressing if desired.

Notes

Adjust the spiciness by using mild or hot buffalo sauce according to your preference.
These cauliflower bites can be made ahead of time and reheated in the oven to retain crispness.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best texture.
