- 1 cup bulgur wheat
- 2 cups water
- 1 cup fresh parsley, finely chopped
- ½ cup fresh mint leaves, finely chopped
- 1 medium tomato, diced
- 1 small cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup olive oil
- 2 tablespoons lemon juice

In a medium saucepan, bring 2 cups of water to a boil. Once boiling, add 1 cup of bulgur wheat, reduce the heat to low, cover, and simmer for about 12 minutes until tender. Remove from heat and let cool.
In a large mixing bowl, combine the finely chopped parsley, mint leaves, diced tomato, cucumber, and red onion.
Once the bulgur has cooled, add it to the bowl with the vegetables and herbs.
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
Pour the dressing over the bulgur mixture and toss gently until everything is well combined.
