In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and set aside.
In the slow cooker, add the chopped cabbage, carrots, and potatoes.
Layer the cooked ground beef on top of the vegetables.
Add the diced tomatoes (with their juice), chopped onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, salt, and pepper to the slow cooker.
Stir the ingredients gently to combine.
Cover the slow cooker and set it to low. Cook for 6 hours, or until the vegetables are tender.
Once cooked, taste and adjust seasoning if necessary before serving.
For a bit of extra flavor, consider adding some bay leaves or a splash of balsamic vinegar before cooking.
