Ingredients
  

  • 1 medium head cabbage About 2 pounds.
  • 1 large onion Chopped.
  • 2 cloves garlic Minced.
  • 2 medium carrots Sliced.
  • 2 stalks celery Sliced.
  • 1 bell pepper bell pepper Chopped.
  • 1 can diced tomatoes 14.5 ounces, with juice.
  • 6 cups low-sodium vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon black pepper To taste.
  • 1 teaspoon salt To taste.
  • 1 lemon lemon juice Juice of 1 lemon.

Instructions
 

  • Start by chopping the cabbage into small bite-sized pieces. Set it aside.
  • In a large pot, heat a small amount of oil over medium heat.
  • Add the chopped onion and garlic, sauté for about 5 minutes, until the onion becomes translucent.
  • Add the sliced carrots, celery, and bell pepper into the pot. Cook for another 5 minutes, stirring occasionally.
  • Stir in the cabbage, diced tomatoes, vegetable broth, oregano, basil, salt, and black pepper. Bring the mixture to a boil.
  • Once boiling, reduce the heat and let the soup simmer for about 25 minutes, or until the vegetables are tender.
  • After the soup has finished simmering, add the lemon juice to brighten the flavors. Adjust seasoning as necessary.
  • Serve hot, garnished with fresh herbs if desired.

Notes

This soup is very versatile. Feel free to add other vegetables like spinach, zucchini, or green beans if you like.
Store any leftovers in the refrigerator for up to 3 days. Reheat on the stove or in the microwave before serving.
For a spicy kick, add a pinch of red pepper flakes while cooking.
