Ingredients
  

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced any color
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon tomato paste
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • to taste salt
  • to taste pepper
  • 4 burger buns
  • optional toppings: shredded lettuce, tomato slices, pickles, or coleslaw

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until they have softened, about 3-4 minutes.
  • Stir in the minced garlic and cook for another 30 seconds until fragrant.
  • Add the ground chicken to the skillet and break it up with a wooden spoon. Cook until it is no longer pink, about 5-6 minutes.
  • Stir in the Cajun seasoning, followed by the tomato paste, chicken broth, and Worcestershire sauce. Mix everything well.
  • Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  • While the mixture simmers, toast the burger buns if desired.
  • Serve the spicy chicken mixture on top of the toasted buns, along with your favorite toppings.

Notes

For added heat, consider including a bit of cayenne pepper in the Cajun seasoning mix.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
This dish can also be served over rice or in a wrap for a different twist!
