- 2 whole ripe avocados
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls (bocconcini) Can substitute with sliced or shredded mozzarella.
- ¼ cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze Drizzle a little extra on top for presentation if desired.
- 1 tablespoon olive oil

Begin by cutting the avocados in half lengthwise. Remove the pit and scoop out a little of the flesh to create more room for the filling if desired.
In a mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil.
