Ingredients
  

  • 2 whole ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini) Can substitute with sliced or shredded mozzarella.
  • ¼ cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze Drizzle a little extra on top for presentation if desired.
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions
 

  • Begin by cutting the avocados in half lengthwise. Remove the pit and scoop out a little of the flesh to create more room for the filling if desired.
  • In a mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil.
  • Drizzle the olive oil and balsamic glaze over the mixture. Season it with salt and pepper to taste, then gently toss to combine.
  • Spoon the Caprese mixture into the avocado halves evenly.
  • Drizzle a little extra balsamic glaze on top for presentation if desired.
  • Serve immediately on a serving plate and enjoy!

Notes

You can substitute fresh mozzarella with sliced mozzarella or shredded mozzarella if you prefer.
For added flavor, consider adding a pinch of red pepper flakes for a bit of heat.
This dish is best served fresh, but if you need to prepare it in advance, keep the avocado halves from browning by squeezing a little lemon juice over them before adding the filling.
