  • 1 lb beef stew meat cubed nice and even for quick cooking
  • 4 medium potatoes peeled and diced
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons vegetable oil for browning
  • 1 cup beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste salt and pepper season to taste
  • 2 tablespoons fresh cilantro chopped, for serving

  • Heat vegetable oil in the pressure cooker pot on medium heat until hot but not burnt.
  • Add beef cubes and brown them on all sides to lock in flavor.
  • Add chopped onion and minced garlic; sauté until onion is soft and translucent.
  • Sprinkle in ground cumin, paprika, salt, and pepper; stir well to coat everything evenly.
  • Add diced potatoes and pour in beef broth; bring to a boil.
  • Seal the lid with the sealing ring, close the valve, and wait for the float valve to rise to lock in pressure and start cooking.
  • Cook for about 25 minutes, then use quick release to let out the steam. Open the lid, sprinkle fresh cilantro on top, and serve.

Notes

Store leftovers in airtight containers in the fridge for up to 3 days or freeze in meal-sized portions. Reheat gently and add a splash of water or broth to loosen if needed.
