  • 2 pounds boneless skinless chicken breasts cut into small pieces
  • salt freshly ground black pepper for seasoning
  • 1 cup low-sodium chicken broth or stock to keep it light
  • 2 tablespoons low-sodium soy sauce that brings the salty goodness
  • 0.5 teaspoon freshly grated ginger adds a little zing
  • 0.25 cup hoisin sauce for that sweet and tangy kick
  • 1 tablespoon rice vinegar to brighten things up
  • 2 tablespoons cornstarch to make the sauce thick and sticky
  • 3 cloves garlic minced
  • 2 teaspoons sesame oil or substitute canola oil
  • 1 to 2 teaspoons Sriracha hot sauce to taste
  • 0.75 cup unsalted cashews for a crunchy bite
  • 1 head green leafy lettuce romaine, bib, or butter
  • 5 green onions chopped, divided

  • Season the chicken pieces well with salt and black pepper. You want every bite to have a little punch.
  • Heat the sesame oil in a large skillet or your pressure cooker’s sauté mode over medium-high heat. Then toss in minced garlic and grated ginger; cook for just 30 seconds so they don’t burn but get fragrant.
  • Add your chicken pieces to the hot oil. Stir and cook until the chicken loses that raw pink look, about 5 to 7 minutes. You want a nice tender pull but not overdone yet.
  • In a small bowl, whisk together chicken broth, soy sauce, hoisin sauce, rice vinegar, and cornstarch until the mixture is smooth. This sauce gonna be the star glaze here.
  • Pour this sauce into your skillet with the chicken and stir it around continuously. Watch as it thickens up in just a couple minutes. Then you’re ready to take it off heat.
  • Now, spoon your cashew chicken onto fresh lettuce leaves. Sprinkle chopped green onions all over for that fresh crunch. Wrap it up and serve right away while it’s warm and tasty.

Notes

Store cooked chicken filling in an airtight container in the fridge for up to 3 days. Let it cool before sealing so condensation doesn’t make it watery. If you packed extra sauce, save it separately to reheat and keep the thick texture intact. Keep your lettuce leaves wrapped in a damp paper towel inside a zip-top bag to stay crisp longer.
