  • 1.5 pounds Lean Ground Beef the heart and soul, gotta have it lean
  • 1 Red Bell Pepper seeded and chopped
  • 1 Yellow Onion chopped
  • 1 ounce Taco Seasoning Mix for southwestern flavor
  • 2 ½ cups Biscuit Mix like Bisquick
  • 1 cup Water split for seasoning and dough
  • Cooking Spray like Pam
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend shredded and divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa mild

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large skillet over medium heat, brown the ground beef. Drain excess fat.
  • Add chopped red bell pepper and onion. Cook for 5 minutes until tender.
  • Stir in taco seasoning mix and ¼ cup of water. Cook for 2–3 minutes, then remove from heat.
  • In a medium bowl, mix biscuit mix with remaining ¾ cup water until just combined.
  • Spray a 9x13-inch casserole dish with cooking spray, then press dough evenly into bottom.
  • Spread the beef mixture evenly over biscuit layer.
  • In a bowl, combine sour cream, mayonnaise, green chiles, ¾ cup shredded cheese, and garlic powder. Spread over beef layer.
  • Spoon salsa over creamy layer and sprinkle with remaining shredded cheese.
  • Bake uncovered for 30 minutes until golden and bubbly. Let rest a few minutes before serving.

Notes

Let cool slightly before serving to help hold shape. Garnish with avocado slices, side salad, or pico de gallo.
