  • 1 cup quinoa rinsed and drained
  • 2 cups vegetable broth
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 cup broccoli florets
  • 1 cup carrot coins
  • 1 cup zucchini or yellow squash chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 4 ounces shredded Gruyere cheese
  • 4 ounces shredded cheddar cheese divided
  • Salt and pepper to taste

  • Preheat your oven to 375°F. This is gonna get the top nice and bubbly once your bake’s ready.
  • Bring the vegetable broth to a boil in a medium saucepan. Add your rinsed quinoa, then lower the heat and cover it tight. Let it simmer for 15 minutes or until the quinoa soaks up all the liquid.
  • While that's cooking, steam your broccoli, carrots, and squash till they’re tender-crisp. That usually takes about 5 minutes and keeps the veggies bright.
  • Melt the butter in a small pan over medium heat. Whisk in the flour and cook for couple minutes until it’s lightly golden.
  • Slowly add the milk, along with onion and garlic powder, whisking all the while. Keep it moving till the sauce thickens, about 3 to 5 minutes.
  • Combine your quinoa, veggies, and cheese sauce real good in a big bowl. Pour that mix into a greased baking dish and spread it out evenly. Pop it in the oven and bake for 20 minutes or until the top’s golden and bubbly.

Notes

Serve warm for best taste. You can use frozen veggies to save prep time. Store leftovers in an airtight container in the fridge up to 4 days, or freeze in portions.
