Instructions
Instructions
Start by preheating your oven to 400°F (200°C). Rub each potato with olive oil, season with salt and pepper. Pierce them several times with a fork to let steam escape.
Place the potatoes directly onto the oven rack and bake for 45 to 60 minutes until tender when pierced with a fork.
While the potatoes bake, mix shredded chicken with cream cheese, butter, ranch seasoning mix, hot sauce, and one cup of cheddar cheese until smooth and creamy.
Once potatoes are done, let them cool slightly. Cut a slit lengthwise on each potato and carefully scoop out the insides, leaving the shell intact.
Mix the scooped potato flesh into the chicken mixture to combine flavors.
Spoon the chicken and potato filling back into each potato shell. Top with the remaining cheddar cheese.
Bake the stuffed potatoes in the oven for another 10 to 15 minutes until the cheese is melted and bubbly.
Just before serving, drizzle additional hot sauce if desired for extra spice.
If short on time, microwave potatoes for 5-7 minutes, then finish in the oven for best skin texture.
Use pre-cooked rotisserie chicken for convenience, and prepare the chicken mixture ahead to save time.
Notes
Serve warm and enjoy the cheesy, spicy flavors. These stuffed potatoes store well refrigerated or frozen for convenient reheating.
