Ingredients
  

  • 1 cup uncooked long-grain rice
  • 1 lb ground beef Can substitute with ground turkey or chicken for a lighter version.
  • 1 can (15 oz) black beans Drained and rinsed.
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn Frozen or canned.
  • 1 packet (about 1 oz) taco seasoning
  • 2 cups beef broth or water
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional chopped cilantro For garnish.
  • optional diced green onions For garnish.

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Season with salt and pepper.
  • Add the taco seasoning to the skillet and mix well, letting it cook for an additional 2 minutes until fragrant.
  • Stir in the rice, black beans, diced tomatoes with green chilies, corn, and beef broth (or water). Bring to a boil, then reduce the heat to low and cover the skillet.
  • Cook for about 15 minutes, or until the rice is tender and has absorbed the liquid.
  • Once the rice is cooked, remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.
  • Fluff the rice mixture with a fork and serve hot, garnished with chopped cilantro and diced green onions if desired.
  • Customize your dish with your favorite taco toppings like sour cream, jalapeƱos, or avocado before serving.
