Ingredients
  

  • 3 cups cooked chicken, shredded You can substitute rotisserie chicken for quicker preparation.
  • 1 can cream of chicken soup 10.5 oz can.
  • ½ cup sour cream
  • 1 cup chicken broth
  • 1 package stuffing mix 6 oz package.
  • 1 cup mixed vegetables Can include peas, carrots, corn, or your favorite vegetables.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste salt and pepper
  • 2 tablespoons butter, melted

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  • In a separate bowl, prepare the stuffing mix according to package directions and mix in the melted butter.
  • Spread the chicken mixture evenly in the bottom of a greased 9x13 inch baking dish.
  • Top the chicken mixture with the prepared stuffing, spreading it evenly over the chicken.
  • Bake in the preheated oven for 45 minutes, or until the casserole is hot and bubbly, and the stuffing is golden brown.
  • Let it cool for a few minutes before serving.

Notes

You can substitute rotisserie chicken for the cooked chicken to save time.
Feel free to add your favorite vegetables to the mixture for more flavor.
This casserole can be prepared ahead of time and stored in the refrigerator, then baked before serving.
