Preheat your oven to 400°F (200°C).
Wash and peel the potatoes, then cut them into bite-sized chunks.
In a large mixing bowl, combine the potatoes with 2 tablespoons of olive oil, salt, pepper, and half of the dried herbs (oregano and thyme). Toss to coat evenly.
Spread the potatoes in a single layer on a baking sheet.
In the same mixing bowl, add the chicken breasts and drizzle with the remaining 2 tablespoons of olive oil. Sprinkle the remaining herbs, garlic powder, salt, and pepper over the chicken. Rub the mixture into the chicken breasts to coat them well.
Place the chicken breasts on the baking sheet alongside the potatoes, ensuring they are evenly spaced.
Roast in the preheated oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the potatoes are golden and tender, stirring the potatoes halfway through cooking.
Once cooked, remove from the oven and let rest for 5 minutes. Garnish with freshly chopped parsley before serving.
