Preheat your oven to 400°F (200°C).
In a large bowl, combine diced potatoes, 2 tablespoons of olive oil, garlic powder, thyme, salt, and pepper. Toss well to coat the potatoes evenly.
Spread the seasoned potatoes in a single layer on one side of a baking sheet.
Pat the chicken breasts dry with a paper towel, then season both sides with the remaining olive oil, paprika, salt, and pepper.
Place the seasoned chicken breasts on the other side of the baking sheet, ensuring they are not overlapping with the potatoes.
Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
Optionally, broil on high for an additional 2-3 minutes to crisp up the tops of the potatoes and the chicken skin.
Remove from the oven and let rest for about 5 minutes. Garnish with fresh parsley before serving.
