Ingredients
  

  • 4 pieces chicken breasts About 6 ounces each.
  • 4 medium potatoes About 7 ounces each, diced.
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • to taste salt
  • to taste black pepper
  • fresh parsley For garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine diced potatoes, 2 tablespoons of olive oil, garlic powder, thyme, salt, and pepper. Toss well to coat the potatoes evenly.
  • Spread the seasoned potatoes in a single layer on one side of a baking sheet.
  • Pat the chicken breasts dry with a paper towel, then season both sides with the remaining olive oil, paprika, salt, and pepper.
  • Place the seasoned chicken breasts on the other side of the baking sheet, ensuring they are not overlapping with the potatoes.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
  • Optionally, broil on high for an additional 2-3 minutes to crisp up the tops of the potatoes and the chicken skin.
  • Remove from the oven and let rest for about 5 minutes. Garnish with fresh parsley before serving.

Notes

Feel free to add other herbs like rosemary or oregano for extra flavor.
For a variation, you can add vegetables like carrots or bell peppers to the potatoes.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
