Ingredients
  

  • 4 pieces boneless, skinless chicken breasts about 1.5 lbs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 piece lemon, juice Juice of 1 lemon
  • 1 piece lemon, zest Zest of 1 lemon
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • 1 cup long-grain white rice
  • 2 cups chicken broth or water
  • optional fresh parsley for garnish

Instructions
 

  • In a mixing bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and pepper.
  • Add the chicken breasts to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes (or refrigerate for up to 2 hours for more flavor).
  • While the chicken marinates, rinse the rice under cold water until the water runs clear.
  • In a rice cooker or pot, combine the rinsed rice and chicken broth (or water). Cook according to package instructions for the rice.
  • In a large skillet over medium heat, add the marinated chicken breasts. Cook for about 6-7 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F).
  • Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
  • Fluff the rice with a fork and divide it among four plates. Top with slices of the lemon garlic chicken.
  • Garnish with fresh parsley if desired and serve immediately.

Notes

For a complete meal, consider adding a side of steamed vegetables.
To add more flavor to the rice, you can cook it with chopped onions or add a bay leaf while cooking.
You can adjust the amount of lemon juice based on your taste preference for a milder or zestier flavor.
