Ingredients
  

  • 3 cups cooked chicken breast, shredded About 1.5 pounds raw chicken.
  • 1 cup cooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables Peas, carrots, corn.
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add the shredded chicken and cook for 3-4 minutes until warmed through.
  • Add the cream of chicken soup, chicken broth, garlic powder, onion powder, dried thyme, salt, and pepper to the skillet. Stir well to combine.
  • In a mixing bowl, combine the cooked rice and frozen mixed vegetables. Add the chicken mixture and stir until everything is mixed evenly.
  • Transfer the mixture into a greased 9x13 inch casserole dish. Spread it out evenly.
  • Sprinkle the shredded cheddar cheese on top of the casserole.
  • Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it sit for 5 minutes before serving.

Notes

You can substitute the mixed vegetables with your choice of fresh vegetables, such as broccoli or bell peppers.
For a healthier option, use brown rice instead of white rice.
Leftovers can be stored in the refrigerator for up to 3 days or frozen for later enjoyment.
