Start by preparing the chicken breasts. Pat them dry with paper towels and season both sides with garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.
In a pan over medium heat, add the olive oil. Once hot, sear the chicken breasts for about 2-3 minutes on each side until they are golden brown. This step adds extra flavor but can be skipped if you’re short on time.
Transfer the seared chicken breasts to the crockpot. Pour the chicken broth over the top.
Add the diced vegetables around the chicken in the crockpot.
Cover the crockpot with the lid and set it on low for 6 hours. Alternatively, you can cook on high for 3-4 hours.
Once the cooking time is up, check the chicken for doneness; it should reach an internal temperature of 165°F (75°C). Shred the chicken with two forks if desired.
Serve hot, garnished with fresh parsley if using.
