Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup diced vegetables Carrots, bell peppers, or zucchini.
  • to taste fresh parsley For garnish, optional.

Instructions
 

  • Start by preparing the chicken breasts. Pat them dry with paper towels and season both sides with garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.
  • In a pan over medium heat, add the olive oil. Once hot, sear the chicken breasts for about 2-3 minutes on each side until they are golden brown. This step adds extra flavor but can be skipped if you’re short on time.
  • Transfer the seared chicken breasts to the crockpot. Pour the chicken broth over the top.
  • Add the diced vegetables around the chicken in the crockpot.
  • Cover the crockpot with the lid and set it on low for 6 hours. Alternatively, you can cook on high for 3-4 hours.
  • Once the cooking time is up, check the chicken for doneness; it should reach an internal temperature of 165°F (75°C). Shred the chicken with two forks if desired.
  • Serve hot, garnished with fresh parsley if using.
