Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 piece lemon Zested and juiced.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 pound asparagus, trimmed
  • to taste fresh parsley, chopped For garnish.

Instructions
 

  • Start by prepping your ingredients. Mince the garlic, zest the lemon, and then squeeze its juice into a small bowl. Set aside.
  • Season the chicken breasts with salt, pepper, and oregano on both sides.
  • Open the skillet over medium heat and add 2 tablespoons of olive oil. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes per side, or until they are golden brown and cooked through (internal temperature should reach 165°F / 75°C).
  • Once the chicken is cooked, add the minced garlic to the skillet. Stir for about 30 seconds until fragrant.
  • Pour the lemon juice and lemon zest over the chicken, allowing the flavors to combine.
  • In the same skillet, remove the chicken briefly and set on a serving platter. Add trimmed asparagus to the skillet, stirring for 3-4 minutes or until slightly tender but still crisp. Season with a pinch of salt and pepper.
  • Serve the chicken breasts alongside the sautéed asparagus and sprinkle with fresh parsley for garnish.

Notes

You can customize this dish by adding other vegetables like bell peppers or broccoli.
For a heartier meal, serve with quinoa or brown rice.
