Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 cloves garlic, minced
  • 1 piece lemon Juice of 1 lemon.
  • to taste fresh parsley For garnish (optional).

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together olive oil, salt, pepper, oregano, thyme, minced garlic, and lemon juice to create a marinade.
  • Place the chicken breasts in a baking dish and pour the marinade evenly over the chicken, making sure to coat all sides.
  • Allow the chicken to marinate for at least 5 minutes (or up to 1 hour in the fridge for more flavor).
  • Once marinated, place the baking dish in the preheated oven and bake for 25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove the baking dish from the oven and let the chicken rest for 5 minutes before slicing.
  • Garnish with fresh parsley if desired, and serve with your choice of sides.

Notes

You can substitute fresh herbs for dried if you have them on hand. Use about three times the amount.
For extra flavor, consider adding sliced lemons or vegetables to the baking dish during cooking.
Ensure the chicken is evenly distributed in the dish to ensure even cooking.
