Start by preparing your vegetables. Dice the carrots and potatoes, and slice the onion. Mince the garlic.
In a large bowl, combine the chicken breasts, diced vegetables (carrots, potatoes, onions), minced garlic, thyme, rosemary, salt, and pepper.
Drizzle the olive oil into the slow cooker and spread it evenly over the bottom.
Place the seasoned chicken and vegetable mixture into the slow cooker.
Pour the chicken broth over the top of the chicken and vegetables, ensuring they are well coated.
Cover the slow cooker with the lid and set it to low heat for 6 hours.
After 6 hours, check the chicken for doneness. It should be tender and easily shredded with a fork.
Serve hot, spooning some of the broth and vegetables over the chicken.
Feel free to add other vegetables such as green beans or bell peppers based on your preference.
If you prefer thicker broth, you can remove the chicken and vegetables once cooked and turn the slow cooker to high, adding a mixed slurry of cornstarch and water until thickened.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
