Ingredients
  

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 1 tablespoon olive oil
  • 2 teaspoons taco seasoning
  • 4 large flour tortillas
  • 1 cup salsa
  • 1 cup sour cream
  • to taste fresh cilantro, chopped for garnish, optional

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Add the chopped onion and bell peppers. Sauté until the vegetables are soft, about 5 minutes.
  • Add the shredded chicken, black beans, cooked rice, and taco seasoning to the skillet. Stir well to combine all ingredients and heat through, about 5-7 minutes.
  • Warm the flour tortillas in a separate pan or microwave to make them easier to fold.
  • To assemble the burritos, lay a tortilla flat and place a generous scoop of the chicken mixture in the center. Top with shredded cheese and a spoonful of salsa.
  • Fold the sides of the tortilla inward and then roll the burrito from the bottom up, ensuring the filling stays inside.
  • Repeat with the remaining tortillas and filling.
  • Serve immediately, garnished with fresh cilantro, and alongside sour cream and additional salsa if desired.
  • Feel free to customize the fillings by adding avocado, corn, or jalapeños for extra flavor.
