- 4 pieces chicken breasts About 6 oz each.
- 8 oz fresh mozzarella cheese Sliced.
- 4 large ripe tomatoes Sliced.
- 1 cup fresh basil leaves
- 4 tablespoons olive oil
- 4 tablespoons balsamic glaze
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder Optional.
Preheat your grill or grill pan over medium-high heat.
While the grill is heating, season the chicken breasts with olive oil, salt, black pepper, and garlic powder (if using) on both sides.
Once the grill is hot, place the chicken breasts on it. Cook for approximately 6-7 minutes on one side, then flip and cook for an additional 6-7 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Remove the cooked chicken from the grill and let it rest for 5 minutes. After resting, slice the chicken into strips.
In a large bowl, combine the sliced chicken, fresh mozzarella, sliced tomatoes, and basil leaves.
Drizzle olive oil and balsamic glaze over the salad. Toss gently to mix all ingredients.
Divide the Chicken Caprese Salad among serving plates and serve immediately.
Feel free to add a sprinkle of red pepper flakes for a spicy kick.
