- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, diced
- 1 14.5 ounce can diced tomatoes with green chilies
- 1 15 ounce can kidney beans, drained and rinsed
- 1 15 ounce can black beans, drained and rinsed
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, or until softened.
Add the minced garlic and cook for an additional minute until fragrant.
Increase the heat to medium-high and add the diced chicken to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes.
Stir in the diced tomatoes, kidney beans, black beans, chicken broth, chili powder, cumin, oregano, and corn. Season with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, allowing the flavors to meld together.
Taste and adjust the seasonings as needed. If you like it spicier, add more chili powder.
