- 1 lb boneless, skinless chicken breast cut into bite-sized pieces
- 4 slices ham diced
- 1 cup Swiss cheese shredded
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- salt to taste
- pepper to taste
- fresh parsley for garnish, optional
Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
Add the bite-sized chicken pieces to the pot. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.
Sprinkle the flour over the chicken and stir to coat. Cook for another 1-2 minutes.
Slowly add the chicken broth while stirring to combine. Bring the mixture to a boil.
Once boiling, reduce the heat to low and simmer for about 15 minutes.
After simmering, add the diced ham, heavy cream, shredded Swiss cheese, dried thyme, salt, and pepper. Stir until the cheese is melted and the soup is heated through.
Once heated, taste and adjust seasoning if necessary.
Serve hot, garnished with fresh parsley if desired.
For extra flavor, you can add a splash of white wine while cooking the chicken.
Feel free to substitute other cheeses like mozzarella or cheddar based on your preference.
This soup pairs well with crusty bread or a fresh side salad for a complete meal.
