Ingredients
  

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 4 slices ham diced
  • 1 cup Swiss cheese shredded
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish, optional

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  • Add the bite-sized chicken pieces to the pot. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.
  • Sprinkle the flour over the chicken and stir to coat. Cook for another 1-2 minutes.
  • Slowly add the chicken broth while stirring to combine. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and simmer for about 15 minutes.
  • After simmering, add the diced ham, heavy cream, shredded Swiss cheese, dried thyme, salt, and pepper. Stir until the cheese is melted and the soup is heated through.
  • Once heated, taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, you can add a splash of white wine while cooking the chicken.
Feel free to substitute other cheeses like mozzarella or cheddar based on your preference.
This soup pairs well with crusty bread or a fresh side salad for a complete meal.
