  • ¼ cup hoisin sauce
  • 2 tablespoon reduced-sodium soy sauce or tamari for gluten-free
  • 2 tablespoon water
  • 1 ½ tablespoon rice wine vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sriracha or gochujang optional, for spice
  • 1 tablespoon olive oil
  • 1 pound ground chicken (or turkey works too)
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 2 teaspoon freshly grated ginger
  • 8 oz can water chestnuts drained & diced
  • ¼ cup chopped green onion plus more to serve
  • 1 head butter lettuce or romaine hearts separated into cups

  • Whisk together hoisin sauce, soy sauce, water, rice wine vinegar, sesame oil, and sriracha or gochujang in a small bowl; set aside.
  • Hit your cooker on the sauté mode and heat olive oil up nice and hot.
  • Add diced onion and garlic; sauté for 2-3 minutes till you notice the softness and aroma coming out.
  • Stir in ground chicken, use a spoon to break it up and cook until browned and fully cooked through. You want that tender pull in each bite.
  • Pour in your sauce mix, stir well so every bit of chicken is coated with that tasty broth depth.
  • Seal the lid, set pressure to high, and cook for 5 minutes. You’re gonna love how fast this comes together.
  • Let the pressure build then use a slow release so the flavors really soak in without losing moisture.
  • Open it up, stir one last time, then scoop the chicken into your lettuce cups. Garnish with green onions and dig in.
