  • ¼ cup hoisin sauce adds that sweet and tangy base you crave
  • 2 tablespoon reduced-sodium soy sauce or tamari sauce choose tamari for gluten-free magic
  • 2 tablespoon water helps thin out the sauce for perfect coat
  • 1 ½ tablespoon rice wine vinegar brightens everything up with its zing
  • 1 teaspoon sesame oil a little nutty flavor that makes the dish pop
  • 1 tablespoon sriracha or gochujang to taste - only if you wanna bring that spicy kick
  • 1 tablespoon olive oil for sautéing diced onion, garlic, and ground chicken
  • 1 pound ground chicken or turkey the protein hero holding it all together
  • 1 small yellow onion, diced adds sweetness and depth
  • 2 cloves garlic, minced brings that classic garlicky punch you love
  • 2 teaspoon freshly grated ginger fresh zing for warming flavor
  • 8 oz can water chestnuts, drained and diced for crunch that surprises you
  • ¼ cup chopped green onion fresh and bright garnish
  • 1 head butter lettuce or romaine hearts, separated into cups the crisp wrap that cools and balances it all

  • In a small bowl, whisk together the hoisin sauce, soy sauce or tamari, water, rice wine vinegar, sesame oil, and if desired, the sriracha or gochujang. This mix is your flavor base.
  • Set pressure cooker to sauté and pour in olive oil. When hot, add diced onion and minced garlic. Cook until soft and fragrant, about 3 to 4 minutes.
  • Add ground chicken and break up with a spatula. Cook until browned and no longer pink, about 5 to 7 minutes.
  • Pour in sauce mixture, stir to coat chicken evenly. Close lid and set pressure cooker to high pressure for 5 minutes.
  • After cooking, do a slow release to keep chicken tender and sauce thickened.
  • Open lid, stir chicken, then fold in diced water chestnuts and ¼ cup chopped green onion.
  • Spoon saucy chicken mixture into lettuce cups and serve immediately.

Notes

Serve immediately in fresh lettuce cups. Store chicken mixture separately from lettuce for best freshness. Leftovers keep in fridge up to 3 days; lettuce cups not recommended to store assembled.
