Ingredients
  

  • 2 cups cooked chicken, shredded about 2 medium chicken breasts
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • ½ cup almonds, sliced
  • ¼ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper
  • lettuce leaves, for serving optional

Instructions
 

  • Start by cooking the chicken. In a medium pot, boil water and add the chicken breasts. Cook for about 15-20 minutes or until fully cooked. Remove from water and let it cool before shredding.
  • In a large mixing bowl, combine the shredded chicken, diced celery, halved grapes, sliced almonds, and finely chopped red onion.
  • In a separate small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper to create the dressing.
  • Pour the dressing over the chicken and vegetable mixture. Stir gently until everything is well coated.
  • Taste and adjust seasoning with more salt and pepper if needed.
  • Serve the chicken salad on a bed of lettuce leaves if desired, or on its own.
  • Feel free to swap grapes for apples or dried fruits for different flavors.
  • You can also add chopped herbs like parsley or dill for an extra layer of taste.
