  • 1 lime for zest

  • 6 cloves garlic peeled and smashed
  • ½ red onion sliced
  • ¼ cup red onion diced small
  • ground cumin
  • black pepper
  • kosher salt
  • turmeric
  • cinnamon
  • crushed red pepper flakes
  • ½ cup plain yogurt for tangy marinade punch
  • English cucumber diced, fresh topping
  • cilantro chopped, fresh topping
  • red jalapeno diced, fresh topping
  • queso fresco crumbled, fresh topping
  • garlic toum fresh topping, or use sour cream
  • sour cream optional fresh topping alternative to garlic toum
  • flour tortillas to wrap the tacos

  • Mix the marinade. In a big bowl, squeeze the lime juice and zest, add olive oil, garlic cloves, sliced red onion, cumin, black pepper, salt, turmeric, and cinnamon. Toss it all together well.
  • Marinate the chicken thighs. Add chicken to the marinade bowl and coat them well. Let it sit for at least 30 minutes or up to 2 hours in the fridge.
  • Load up the pressure cooker with the marinated chicken thighs spread in a single layer.
  • Seal the lid and bring up the pressure. Cook under pressure for about 15 minutes.
  • Let the natural release do its thing to keep chicken juicy and tender.
  • Shred or slice the chicken, serve it in warm tortillas, and add fresh toppings like cucumber, jalapeno, queso fresco, cilantro, and a dollop of garlic toum or sour cream.
