- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded You can substitute rotisserie chicken to speed up the process.
- 1 cup broccoli florets
- 9 ounces cheese tortellini Fresh or frozen.
- 1 teaspoon dried thyme

Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and sauté for about 3 minutes until it becomes translucent.
