- 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
- to taste salt
- to taste pepper
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 8 ounces egg noodles
- 4 tablespoons unsalted butter
- ¼ cup grated Parmesan cheese
- as needed fresh parsley For garnish, optional.
Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest.
In the same pot you cooked the chicken, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente, usually around 6-8 minutes.
Once the noodles are cooked, drain them in a colander and return them to the pot. Add the butter and stir until melted and well combined.
Slice the cooked chicken into strips and serve it over the buttered noodles. Sprinkle with grated Parmesan cheese and garnish with fresh parsley if desired.
Serve immediately and enjoy!
For added flavor, consider sautéing some vegetables (like peas or spinach) in the skillet after removing the chicken and before adding the noodles and butter.
You can substitute the egg noodles with your favorite pasta type if desired.
This dish can be easily doubled for larger gatherings or meal prep for the week ahead.
