  • 1 large skillet or wok
  • 1 wooden spoon or spatula
  • 1 measuring cups and spoons
  • 1 chopping board
  • 1 small bowl for mixing

Ingredients
  

  • 4 cups cooked rice Preferably day-old.
  • 6 tablespoons chili oil
  • 6 cloves garlic, minced
  • 1 tablespoon soy sauce
  • to taste salt
  • ¼ cup green onions, chopped For garnish.

Instructions
 

  • Heat the large skillet or wok over medium heat. Add the chili oil and allow it to get hot.
  • Once the oil is hot, add the minced garlic and sauté for about 1-2 minutes until fragrant and golden brown. Be careful not to burn the garlic.
  • Add the cooked rice to the skillet. Using a wooden spoon or spatula, break apart any clumps and mix it thoroughly with the garlic and chili oil.
  • Drizzle the soy sauce over the rice, and season with salt to taste. Continue to stir and fry the rice for about 5-7 minutes, ensuring it is heated evenly and coated well with the flavors.
  • Once the rice is heated through, remove it from heat. Transfer to a serving dish and garnish with the chopped green onions.
  • For an extra kick, consider adding crushed red pepper flakes to the garlic oil while sautéing.
  • If you prefer less heat, reduce the amount of chili oil used.
  • This dish pairs well with fried eggs or grilled meats.
