  • 1.5 pounds boneless skinless chicken thighs chipotle goes best with thighs for moisture, but breasts can work if you careful
  • 1 clove garlic minced
  • 2 tablespoons chipotle in adobo or ground chipotle chili powder if you want less heat
  • 2 teaspoons smoked paprika for that smoky flavor without the burn
  • 1 teaspoon ground cumin to round out the spices
  • 0.5 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon avocado oil or any oil you like to keep chicken from sticking
  • 2 tablespoons red wine vinegar or fresh lime juice if you have it handy
  • 0.25 cup honey wildflower is fancy but any honey you got will do

  • Start by making your marinade. Mash up the minced garlic, chipotle in adobo, smoked paprika, cumin, oregano, salt, and pepper till it’s like a paste.
  • Pour in avocado oil, red wine vinegar, and honey. Whisk it all smooth and emulsified. Grab 2 tablespoons of this to reserve before coating your chicken.
  • Place chicken thighs in a bowl or ziplock bag and pour the rest of the marinade over. Make sure each piece is covered good. Cover and toss in the fridge for at least an hour (overnight if you got time).
  • Now set your pressure cooker on sauté and sear the chicken thighs for a couple minutes on each side till they get a light color. This adds a nice smoky crust flavor you won’t get otherwise.
  • Pour a bit of water or chicken broth into the pot for broth depth, then seal the lid up. Set it to cook on high pressure for 8 minutes.
  • When it’s done, watch for the valve hiss, then carefully do a quick release so it don’t overcook. You’ll spot the steam cues letting you know it’s ready.
  • Open it up and check that tender pull. The chicken should shred or slice easily. Toss shredded chicken with the reserved marinade to up that honey chipotle kick. Serve right away with your favorite sides.

Notes

Only use the reserved marinade for the cooked chicken! Never reuse any marinade that has been used on raw meat as it isn't safe. Store leftover chipotle honey chicken in airtight containers in the fridge for up to 4 days or freeze for up to 3 months.
