Ingredients
  

  • 1 cup pitted and chopped cherries Fresh or dried.
  • 1 cup chocolate cookie crumbs
  • ½ cup chopped walnuts or almonds Feel free to substitute different nuts.
  • ¼ cup cocoa powder
  • ¼ cup powdered sugar Additional for rolling is optional.
  • ¼ cup dark rum For a non-alcoholic version, use cherry juice or soda.
  • 1 teaspoon vanilla extract
  • optional additional powdered sugar or cocoa powder for rolling Optional.

Instructions
 

  • In a mixing bowl, combine the chopped cherries, chocolate cookie crumbs, chopped nuts, cocoa powder, powdered sugar, rum, and vanilla extract.
  • Mix the ingredients together until well combined. If the mixture is too dry, add a little more rum, one teaspoon at a time.
  • Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter.
  • Roll the formed balls in powdered sugar or cocoa powder for a finishing touch, if desired.
  • Place the rum balls on a baking tray or plate lined with parchment paper.
  • Chill the rum balls in the refrigerator for at least 1 hour to help them firm up.
  • Serve chilled or at room temperature, and enjoy!

Notes

For a non-alcoholic version, you can omit the rum and use cherry juice or soda instead.
Feel free to substitute different nuts or use a gluten-free cookie if needed.
Store the rum balls in an airtight container in the refrigerator for up to 1 week.
