Prepare your baking sheet by lining it with parchment paper or wax paper.
In a double boiler, melt the chocolate chips over simmering water, stirring occasionally until smooth, or melt in a microwave-safe bowl in 30-second intervals, stirring in between.
If desired, stir in 1 tablespoon of coconut oil for a smoother chocolate coating.
Hold each strawberry by the stem and dip it into the melted chocolate, coating it completely. Allow any excess chocolate to drip off.
Place the chocolate-covered strawberry on the prepared baking sheet and add garnishes if desired before the chocolate sets.
Once all strawberries are coated, set the baking sheet in the refrigerator for about 15-30 minutes, or until the chocolate is fully hardened.
