Ingredients
  

  • 1 cup rolled oats
  • ½ cup almond butter or any nut butter
  • ¼ cup honey or maple syrup
  • 2 tablespoons cacao powder
  • 2 teaspoons matcha powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup dark chocolate chips optional
  • 2 tablespoons shredded coconut for rolling, optional

Instructions
 

  • In a food processor, combine the rolled oats, almond butter, honey (or maple syrup), cacao powder, matcha powder, vanilla extract, and sea salt. Pulse until the mixture is well combined and sticky. It should hold together when pressed.
  • If desired, stir in dark chocolate chips for added flavor.
  • Using your hands, roll tablespoons of the mixture into small balls (about 1 inch in diameter).
  • If desired, roll the energy balls in shredded coconut to coat them.
  • Place the rolled energy balls on a plate or baking sheet lined with parchment paper.
  • Refrigerate the energy balls for at least 30 minutes to firm up before serving.
