Ingredients
  

  • 2 cups elbow macaroni uncooked
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon mustard powder
  • to taste salt
  • to taste black pepper
  • 1 cup breadcrumbs for topping
  • 2 tablespoons olive oil or melted butter for breadcrumbs

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  • In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes, stirring continuously.
  • Gradually pour in the milk while whisking to avoid lumps. Keep whisking until the mixture thickens and starts to bubble, about 5-7 minutes.
  • Remove the saucepan from heat and stir in the shredded cheddar cheese, mozzarella cheese, garlic powder, onion powder, mustard powder, salt, and pepper until the cheese is fully melted and smooth.
  • Combine the cooked macaroni with the cheese sauce and mix well to coat.
  • Pour the mac and cheese mixture into a greased 9x13 inch baking dish.
  • In a small bowl, mix the breadcrumbs with olive oil or melted butter. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
  • Remove from the oven, let it cool for a few minutes, then serve warm.

Notes

Feel free to mix in cooked vegetables or proteins like bacon or chicken for added flavor and nutrition.
If you prefer a spicier version, consider adding a pinch of cayenne pepper or using pepper jack cheese instead.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
