- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red bell pepper diced
- ½ cup green onions sliced
- ½ cup sweet corn canned or frozen
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente (about 8-10 minutes).
Once the pasta is cooked, drain it in a colander and rinse under cold water to stop the cooking process. Allow it to cool completely.
In a mixing bowl, combine the mayonnaise, apple cider vinegar, garlic powder, salt, and pepper to create the dressing. Mix until well combined.
In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, red bell pepper, green onions, and sweet corn.
