Preheat your oven to 425°F (220°C).
Wash and cut the russet potatoes into thin strips to make fries.
In a mixing bowl, toss the cut potatoes with vegetable oil, paprika, garlic powder, onion powder, chili powder, and salt until evenly coated.
Spread the seasoned fries in a single layer on a baking sheet.
Bake in the preheated oven for approximately 20-25 minutes, or until golden brown and crispy, flipping halfway through.
Meanwhile, prepare the nacho cheese sauce by combining the shredded cheddar cheese and milk in a frying pan over medium heat. Stir constantly until the cheese is melted and smooth.
If desired, add diced jalapeños to the cheese sauce and stir until combined.
Once the fries are done baking, remove them from the oven and place them on a serving platter.
Drizzle the nacho cheese sauce over the fries and add your desired toppings: sour cream, green onions, diced tomatoes, and guacamole.
Serve immediately and enjoy!
