This simple, high-protein, and gluten-free flatbread is made with just cottage cheese and eggs, making a soft, cheesy bread perfect for wraps, sandwiches, or pizza bases.
Preheat your non-stick skillet over medium heat. Spray it lightly with cooking spray.
Whisk together the cottage cheese, eggs, and pinch of salt in a bowl until mostly smooth.
Pour the batter into the hot skillet and spread thin and even like a flatbread canvas.
Cook for 3 to 4 minutes until the edges lift slightly and the bottom is golden brown.
Flip the flatbread carefully and cook the other side for another 3 to 4 minutes until cooked through but tender.
Remove from skillet and serve warm. Optionally drizzle with honey or sprinkle herbs.
Notes
This recipe yields one flatbread about 8 by 11 inches, sufficient for 2 servings. Store leftovers in an airtight container for up to 3 days or freeze for longer storage. Reheat gently before serving.
