- 12 oz pasta your choice, such as penne or spaghetti
- 1 cup cottage cheese
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes optional
- ½ cup pasta water reserved from cooking pasta
- ¼ cup grated Parmesan cheese
- ¼ cup fresh basil, chopped or your choice of herbs
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Reserve ½ cup of pasta water, then drain the pasta.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
Add the cooked pasta to the skillet. Stir in the cottage cheese, salt, black pepper, and red pepper flakes if using.
Gradually add reserved pasta water, about ¼ cup at a time, stirring until a creamy sauce forms.
Mix in the grated Parmesan cheese and fresh basil. Stir until everything is well combined and heated through.
Taste and adjust seasoning if needed. Serve hot.
