- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup vegetable or chicken broth
- 12 ounces pasta of your choice Spaghetti, penne, etc.

Begin by cooking the pasta according to package instructions in a large pot of salted boiling water. Reserve ½ cup of pasta water, drain, and set aside.
In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the diced tomatoes (with their juices), dried basil, dried oregano, salt, and black pepper to the saucepan. Cook for about 5 minutes, allowing the flavors to meld.
In a blender or food processor, combine the cottage cheese and vegetable or chicken broth. Blend until smooth and creamy.
Pour the cottage cheese mixture into the saucepan with the cooked tomatoes. Stir to combine and heat through for another 2-3 minutes. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.
Toss the cooked pasta with the sauce in the saucepan, ensuring every piece of pasta is well coated. Serve immediately, garnished with grated Parmesan cheese if desired.
