Ingredients
  

  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes fresh or canned, drained
  • ½ cup diced green chilies canned or fresh
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt or to taste
  • 1 tablespoon olive oil
  • optional fresh cilantro for garnish
  • as needed tortilla chips or fresh vegetables for serving

Instructions
 

  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the diced tomatoes, green chilies, ground cumin, chili powder, garlic powder, and salt. Stir and cook for about 5 minutes until it begins to bubble.
  • In a mixing bowl, combine the cottage cheese and shredded cheddar cheese. Blend until smooth using a blender or food processor.
  • Add the cooked tomato and chili mixture to the cheese blend and stir to combine well.
  • Return the mixture to the saucepan and heat on low, stirring frequently, for about 5-10 minutes until warm and creamy.
  • Transfer the dip to a serving bowl and garnish with fresh cilantro if desired.
  • Serve warm with tortilla chips or fresh vegetables.

Notes

For a spicier dip, consider adding jalapeños or cayenne pepper.
This dip can be made ahead of time and stored in the refrigerator, then reheated before serving.
