Ingredients
  

  • 1 cup cottage cheese (240 grams)
  • 2 large eggs
  • ½ cup all-purpose flour (60 grams)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon sugar (optional)
  • ½ teaspoon vanilla extract (optional)

Instructions
 

  • In a mixing bowl, combine the cottage cheese and eggs. Whisk until well blended.
  • In a separate bowl, mix the flour, baking powder, salt, and sugar (if using).
  • Gradually add the dry ingredients to the cottage cheese mixture, stirring until just combined. Do not overmix.
  • Heat a non-stick skillet or griddle over medium heat and add a small amount of cooking oil or butter.
  • Pour about ¼ cup of the pancake batter onto the skillet for each pancake.
  • Cook for about 3-4 minutes on one side, or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  • Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
  • Serve hot with your favorite toppings like maple syrup, fruit, or yogurt.

Notes

To make these pancakes even healthier, consider using whole wheat flour or substituting part of the flour with oats.
These pancakes can also be frozen and reheated for quick breakfasts on busy mornings. Simply stack them with parchment paper in between and freeze in an airtight container.
Feel free to add mix-ins such as blueberries or chocolate chips for a sweet twist.
