Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (walnuts or pecans)
  • ½ cup shredded coconut (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper if desired.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a medium mixing bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the rolled oats, chocolate chips, chopped nuts, and shredded coconut (if using) until evenly distributed.
  • Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, leaving enough space between each cookie.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For a chewier texture, slightly underbake the cookies.
Feel free to customize the mix-ins according to your preferences, such as using dried fruits or different types of chocolate.
Store leftover cookies in an airtight container at room temperature for up to a week.
