  • 4 strips Bacon
  • 1 pound Boneless skinless chicken breasts cut into bite-size pieces
  • 1 packet Ranch seasoning mix about 1 ounce
  • 8 ounces Dry penne pasta about half a box
  • 4 cups Low-sodium chicken broth
  • 4 ounces Cream cheese room temperature
  • 1 ½ cups Shredded cheddar cheese divided
  • 1 cup Shredded mozzarella cheese
  • Grated Parmesan cheese for garnish
  • Fresh parsley for garnish

  • Cook bacon in sauté pan or pressure cooker until crispy. Remove and set aside. Leave bacon fat in the pot.
  • Add chicken pieces to bacon fat and sauté 2–3 minutes. Sprinkle in ranch seasoning and stir to coat.
  • Add penne pasta and pour in chicken broth. Stir and seal the lid, ensuring valve is set to sealing.
  • Cook under pressure for 8 minutes. Quick release pressure after cooking.
  • Add cream cheese and stir until melted into a creamy sauce.
  • Stir in bacon crumbles, cheddar, and mozzarella cheese. Cover lid for 1 minute to melt cheese.
  • Sprinkle Parmesan and parsley before serving.

Notes

You can pre-cook bacon or chicken for busy nights. Garnish with more cheddar or ranch if desired.
