Ingredients
  

  • 12 oz penne pasta
  • 1 lb boneless, skinless chicken breasts Can use leftover rotisserie chicken to save time.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ cup ranch dressing
  • 1 cup cream cheese Softened.
  • 1 cup shredded cheddar cheese
  • ¼ cup green onions Chopped for garnish.
  • 4 slices cooked bacon Crumpled (optional).

Instructions
 

  • Begin by boiling a large pot of salted water. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
  • While the pasta cooks, season the chicken breasts with salt, pepper, and garlic powder. Heat a large skillet over medium heat and add a drizzle of oil.
  • Once the skillet is hot, add the chicken breasts. Cook for about 5-7 minutes on each side, or until the chicken is fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before shredding.
  • In the same skillet, lower the heat to medium-low, and add the ranch dressing and cream cheese. Stir until combined, and allow the cream cheese to melt and create a smooth sauce.
  • Add the shredded chicken to the skillet and mix until it’s fully coated with the creamy ranch sauce. Stir in the shredded cheddar cheese until melted and creamy.
  • Combine the cooked penne pasta with the chicken and sauce mixture in the skillet. Toss gently to combine everything thoroughly.
  • Serve hot, garnished with chopped green onions and crumbled bacon if desired.

Notes

You can customize this dish by adding your favorite vegetables such as spinach or bell peppers.
If you prefer, use leftover rotisserie chicken to save time on cooking the chicken.
This dish is great for meal prep as it reheats well. Store leftovers in an airtight container in the refrigerator for up to 3 days.
