Ingredients

Main ingredients

  • 3 cups chopped cooked chicken
  • 5.5 cups chicken broth
  • 2 pieces carrots peeled and diced
  • 2 stalks celery diced
  • 1 cup chopped cooked bacon
  • 1 package ranch dressing mix 1 oz
  • 1 can condensed cheddar cheese soup 10.5 oz
  • 0.67 cup uncooked long-grain white rice

Instructions

Instructions

  • Set your pressure cooker on sauté mode and add the chicken broth, carrots, celery, and uncooked rice. Bring it to a boil so the rice starts soaking up the broth.
  • Once it boils, seal the lid and set the pressure cooker to high pressure for 5 minutes to cook the rice perfectly.
  • When the timer beeps, do a quick release to let the steam escape fast but safely. Be careful of hot steam.
  • Open the lid carefully. Stir in the chopped cooked chicken and cooked bacon.
  • Add the ranch dressing mix and condensed cheddar cheese soup. Stir well to coat everything evenly.
  • Press sauté mode again and let it cook for 5-7 minutes, stirring often until heated through and smelling right. Serve hot.

Notes

I used a rotisserie chicken for the cooked chicken. Here is our recipe for Slow Cooker Rotisserie Chicken: https://www.plainchicken.com/slow-cooker-rotisserie-chicken/

1 cup chopped cooked bacon is about 1 pound raw; turkey bacon can be substituted.
