Ingredients
  

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • ½ cup white chocolate chips
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • additional dried cranberries and white chocolate for garnish (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease the baking pan or line it with parchment paper for easy removal.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.
  • In another bowl, using an electric mixer, beat the softened butter and brown sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  • Fold in the dried cranberries and white chocolate chips using a rubber spatula.
  • Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan, then prepare the frosting.
  • In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and the vanilla extract, mixing until combined and creamy.
  • Spread the cream cheese frosting evenly over the cooled bars.
  • If desired, garnish the top with additional dried cranberries and white chocolate chips.
  • Cut into 12 bars and serve.

Notes

Store leftover bars in an airtight container in the refrigerator for up to 5 days.
These bars can be made ahead of time and frozen for later enjoyment. Just be sure to wrap them well to prevent freezer burn.
